Okra | Roasted With Rosemary

I get asked all the time how I cook my okra. Remember that okra I planted a few months ago in our garden? Man it has really taken off. And because of that we eat okra at least twice a week, sometimes 3. :) If you follow me on Instagram (@decorchick1) you’ve seen an okra picture probably more times than you care to. But, everyone always asks how I make it, and one of my favorites is roasted okra with Rosemary. Mmmm!

Okra-Recipe

Trying it with fresh rosemary was something new and I really loved it. But roasting veggies is probably the easiest thing to do. It’s how I cook the majority of all of our vegetables.

Here’s the recipe for it, and you can basically do this with all veggies.

Recipe Type: Vegetable/Side

Prep time: 10 mins
Cook time: 20 mins
Total time: 30 mins
Oven roasted okra with rosemary.
Ingredients
  • Fresh Okra
  • 1 TB Olive Oil (use more or less depending on how much you are cooking)
  • 1 tsp Salt (use more or less depending on how much you are cooking)
  • 1 tsp Garlic Powder (use more or less depending on how much you are cooking)
  • 1 tsp fresh Rosemary (or dried) – use more or less it’s personal preference
Instructions
  1. Pre-heat oven to 425 degrees
  2. Line cookie sheet with foil or use a roasting pan and lay your okra on it
  3. Drizzle olive oil all over and rub it in to coat the okra
  4. Sprinkle the garlic powder, salt, and rosemary on top
  5. Put in the oven for 15-20 minutes or until done. (just start checking it around the 15 minute mark until desired softness/doneness)

After it’s cooked it will look like this.

Then serve on a pretty plate! Villeroy and Boch sent me these orange salad plates from their Anmut collection and they are really pretty.

They thrive in the heat so being in Texas is perfect for growing okra. But my garden has gotten huge right?! It’s about time to plant fall veggies.

Anyhow, that’s my favorite way to cook okra. It’s delicious to throw on the grill too. Yum yum.

    I think I’m going to try this recipe…unfortunately, I fry okra but only do it once (or twice) a years so I don’t count that as bad…I feel the same way with my fried green tomatoes…I make those just so few times that I fry it. But these look good and I do like to roast veggies; thanks for sharing!

    I’m from the South, so okra is cooked a lot here, but the only way I eat it is fried. My parents loved it in stews, though.

It was my first time going with Randy to one of hi It was my first time going with Randy to one of his gigs. This wasn’t just any gig though. It was a very special wedding for a beautiful couple.❤️

And after witnessing firsthand what all he does for events like this, I have a new appreciation for what he does because it is a LOT.🤯

From loading in setting up three PA systems in 3 separate areas, then immediately switching gears to performance mode and playing ceremony music + sax, dinner music + MC’ing, then reception DJ’ing + sax. It was really pretty freaking mind-blowing to be honest. And then you have to tear it all down! Talk about a full day (I felt hungover the next day and I don’t even drink), but if you are in the entertainment business you get it. And he does this multiple times a month!

So many moving parts, and being flexible when you need to switch gears at the last minute, and he handles it with so much ease. That’s why he’s the professional at his craft.🫶

I was just there more as his emotional support person, but would love to do more events with him where I’m actually useful. 🤪Maybe I’ll learn to wrap up cords the right way one day to his liking, but that’s doubtful. 🤣

It was the perfect new year’s day and can’t wait to do it again!❤️

Yes, but not without a hazy fog lingering over you that never fully lifts.

I still cannot talk about him without tearing up. Certain songs or sayings break me.

After losing a parent, everything looks different. Time with your family begins to feel more intentional, because you want the moments to last.

The hustle feels less important, because you realize your people matter more than any dollar amount.

Grief and gratitude can coexist. It’s okay to be sad, and it’s okay to be thankful for a dad who is worth missing.❤️
