Easy and Delicious Slow-Cooker Pork Carnitas {The Best Crock Pot Recipe Ever!}

You know it’s rare when I share a recipe on here, so you know it MUST be amazing if I am. Well today’s is definitely amazing and will be your new go-to crock pot meal I promise. It makes a lot too so it’s great if you’re having people over. So here’s the recipe for the best slow cooker pork carnitas ever.

My mom gave me the recipe and she got it from my Aunt who also loves to cook. I get my mad cooking skills from them.

Easy and Delicious Slow-Cooker Pork Carnitas (The Best Crock Pot Recipe Ever!)

This delicious crock pot meal will be your new favorite!
Ingredients
  • 1 boneless pork shoulder butt roast (3-4 lbs) [I have used a 5 lb bone-in instead and 2 pork tenderloins and it works just as good]
  • 3 cloves garlic, chopped
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 bunch green onion, chopped
  • 1 1/2 cups cilantro, chopped
  • 1 cup salsa
  • 1/2 cup chicken broth
  • 1/2 cup tequila OR 1/2 cup additional chicken broth. I’ve only used chicken broth when making this. My mom likes it with 1/4 cup tequila, and 3/4 cup chicken broth if you have tequila on hand.
  • 2×4 oz cans chopped green chiles
  • Warm tortillas (we use corn and flour)
  • Fresh cilantro, avocado, chopped tomatoes, sour cream for serving.
Instructions
  1. Place roast in slow cooker. Sprinkle with oil, garlic, salt and pepper (turn it over and coat it all – probably used a little more salt than recipe calls for). Add remaining ingredients. Cover and cook on low 6-8 hours or until tender. Remove meat, cool slightly. Shred with 2 forks. Return meat to cooker to heat if necessary. Spoon meat mixture onto tortillas, serve with toppings.

I like to serve spanish rice with this and some sort of veggie. It’s SOOOOO good. It’s even good as leftovers too because it makes a lot, so you can even pan fry some of the leftovers and get it crispy and place on top of salads etc. Very yummy.  And I love the way our house smells when I make this. All of that cilantro is just delicious. It’s actually a very healthful and low calorie dish too.

You’ll shred it up like this with 2 forks…

    Yum, wonder if you could make this with left over pork roast. I think the crock pot would retenderize the meat. Too much for 2 but great for company.

    I made these Sunday and they were a hit. I had a frozen pork butt and needed to have the meat ready by noon, so I stuck it in the crock pot per the recipe and cooked it on low overnight. It was AMAZING! Thanks so much! I think that I’m going to take the leftover meat and make tamales. Yummy recipe. :-)

    Well, I don’t think I’ve ever commented but I read your blog faithfully, and really enjoy it! I made this recipe when we were in the middle of a big kitchen remodel and we loved it! The only issue I had was that it turned out super runny and the tortillas got all soggy. I’m wondering if that’s how it’s supposed to be? Yours don’t look it though. Any tips/ideas?

      Hi Jana thanks for commenting! :) But to prevent that from happening you could maybe put some of the meat on a plate and blot it a little before putting in the tortilla? But yes it is a very juicy meat and is just one of those things to eat fast. Or use less liquid when cooking.

        Emily–I made it again last night for our church small group and it turned out even better! :-) I used half of the liquid to begin with and then took out 3 cups of liquid when I shredded the pork. So yummy! Thanks for a keeper recipe.

    I was searching for a carnitas recipe for my slow cooker and came across your recipe. And oh wow am I glad it was this recipe that I tried! I dont normally leave comments on recipes that I try even when they are good, but I had to let you know how incredibly amazing this turned out for us!!! We followed the exact directions using all chicken broth and the only thing I added was the juice of a couple limes. I was feeding quite a few extra people last night and this turned out to be perfect! Everyone LOVED their tacos and we are enjoying the leftovers tonight! I will continue to stop by your page to see if you have any other keepers like this one!!! Thank you sooooooo much!

It was my first time going with Randy to one of hi It was my first time going with Randy to one of his gigs. This wasn’t just any gig though. It was a very special wedding for a beautiful couple.❤️

And after witnessing firsthand what all he does for events like this, I have a new appreciation for what he does because it is a LOT.🤯

From loading in setting up three PA systems in 3 separate areas, then immediately switching gears to performance mode and playing ceremony music + sax, dinner music + MC’ing, then reception DJ’ing + sax. It was really pretty freaking mind-blowing to be honest. And then you have to tear it all down! Talk about a full day (I felt hungover the next day and I don’t even drink), but if you are in the entertainment business you get it. And he does this multiple times a month!

So many moving parts, and being flexible when you need to switch gears at the last minute, and he handles it with so much ease. That’s why he’s the professional at his craft.🫶

I was just there more as his emotional support person, but would love to do more events with him where I’m actually useful. 🤪Maybe I’ll learn to wrap up cords the right way one day to his liking, but that’s doubtful. 🤣

It was the perfect new year’s day and can’t wait to do it again!❤️

I still cannot talk about him without tearing up. Certain songs or sayings break me.

After losing a parent, everything looks different. Time with your family begins to feel more intentional, because you want the moments to last.

The hustle feels less important, because you realize your people matter more than any dollar amount.

Grief and gratitude can coexist. It’s okay to be sad, and it’s okay to be thankful for a dad who is worth missing.❤️
