Delicious Marbled Pumpkin and Chocolate Bundt Cake

Happy Monday everyone! I decided to throw you all into a tailspin today and post a yummy recipe instead of a boring ole DIY project. ;) Call me lazy, (or call me smart), but I had my mom make this cake for me so I could post it. She had made it for Christmas a few years back and it was really good so I wanted to share it with all of you since it’s perfect for this time of year. It’s called Marbled Pumpkin-Chocolate Bundt cake, and this recipe came from Woman’s Day.

It’s not too sweet-it’s just perfect.

And it has pretty marbleization.

We decorated the cake plate with those pumpkin candies, and my mom made the green leaves by rolling out green gum drops, and used a piecrust leaf cutter she had from Williams Sonoma.

Marbled Pumpkin-Chocolate Bundt Cake

Cook time: 1 hour
Total time: 1 hour 30 mins
Serves: 12
Ingredients
  • 2 2/3 cup(s) all-purpose flour
  • 2 teaspoon(s) baking powder
  • 2 teaspoon(s) baking soda
  • 1 teaspoon salt
  • 2 stick(s) (1 cup) butter, softened
  • 1 3/4 cup(s) granulated sugar
  • 4 large eggs, at room temperature
  • 2 1/3 cup(s) canned 100% pure pumpkin
  • 6 ounce(s) semisweet baking chocolate, melted as pkg directs and cooled
  • 2 teaspoon(s) vanilla extract
  • 2 teaspoon(s) pumpkin pie spice
  • Garnish: confectioners’ sugar
Instructions
  1. Heat oven to 350°F. Coat a 10-in.-diameter (12-cup) bundt pan with nonstick spray.
  2. Mix flour, baking powder, baking soda and salt in a medium bowl. Beat butter and sugar in a large bowl with mixer on high speed 3 minutes or until pale and fluffy. On medium speed, beat in eggs, 1 at a time. On low speed, beat in pumpkin (mixture will look curdled), then flour mixture until just blended.
  3. Pour 1⁄2 the batter into another bowl. Stir melted chocolate, then vanilla into 1 bowl, pie spice into the other. Alternating batters, drop large spoonfuls into bundt pan. Run a knife through batters to marbleize. Smooth the top.
  4. Bake 1 hour or until a wooden pick inserted in center of cake comes out clean. Cool in pan on a wire rack 15 minutes (cake may settle a bit). Invert cake on rack. Turn cake right side up and cool completely.
  5. To serve: Place on a large cake plate; surround with pumpkins and leaves. Sprinkle with confectioners’ sugar.

    My favorite recipe is a recipe called “Pumpkin Surprise” and it’s my mother’s recipe. LOVE.

    I might try this, although the bundt pan I have is a 10-cup capacity, so I’m going to have to try to figure THAT out. We shall see…. :)

It was my first time going with Randy to one of hi It was my first time going with Randy to one of his gigs. This wasn’t just any gig though. It was a very special wedding for a beautiful couple.❤️

And after witnessing firsthand what all he does for events like this, I have a new appreciation for what he does because it is a LOT.🤯

From loading in setting up three PA systems in 3 separate areas, then immediately switching gears to performance mode and playing ceremony music + sax, dinner music + MC’ing, then reception DJ’ing + sax. It was really pretty freaking mind-blowing to be honest. And then you have to tear it all down! Talk about a full day (I felt hungover the next day and I don’t even drink), but if you are in the entertainment business you get it. And he does this multiple times a month!

So many moving parts, and being flexible when you need to switch gears at the last minute, and he handles it with so much ease. That’s why he’s the professional at his craft.🫶

I was just there more as his emotional support person, but would love to do more events with him where I’m actually useful. 🤪Maybe I’ll learn to wrap up cords the right way one day to his liking, but that’s doubtful. 🤣

It was the perfect new year’s day and can’t wait to do it again!❤️

Yes, but not without a hazy fog lingering over you that never fully lifts.

I still cannot talk about him without tearing up. Certain songs or sayings break me.

After losing a parent, everything looks different. Time with your family begins to feel more intentional, because you want the moments to last.

The hustle feels less important, because you realize your people matter more than any dollar amount.

Grief and gratitude can coexist. It’s okay to be sad, and it’s okay to be thankful for a dad who is worth missing.❤️
